It seems there never is "enough time" to get our meals prepared correctly to get the proper nutrients that our bodies need. However, it is possible to make sensible healthy meals in just a few minutes. The first thing(s) I emphasize as a must have in every kitchen is glassware not plastic tupperware. From water bottles to the lining of food tins, the chemical BPA is present in most plastics. BPA is what’s known as a suspected endocrine disruptor this basically means it can mimic the body’s hormone system and potentially create reproductive health problems, with possible links to cancer. So, people add some class and get some glass!
The whole idea in having glassware is so that you can prepare food and store it for a couple of days. How great would it be to actually still enjoy a healthy meal that you know how, when and who prepared it. Having enough food prepared for a couple of days can save you money ( for some glassware!) In comparison to eating out on a day to day basis which can drain your wallet, lead to poor eating choices and sometimes not worth the experience.

Eating healthy does not have to be a challenge and does not need to be costly. There is a difference between eating and being hungry. Try to start your day with breakfast in your stomach. It is definitely the most important meal of the day and gets the wheels turning. Limit your meals to three balanced meals. Snack sensibly, drink water, avoid unnecessary salt and sugar as most foods already own these properties naturally, Importantly stay hydrated! The human adult body is made up of 55-60% water. Incorporate some exercise even something as simple as walking is great extender of life! Smile and laugh more it reduces calories and relaxes the muscles of the face.

Even though all foods are important, I have a list of foods that I hold up on a pedestal because of how much our bodies benefit from them. The three main basic vegetables that are easily accessible and affordable year round are collard greens, red onions, and tomatoes. All vegetables are good for you unless of course you have allergic reactions or simply just do not like the taste. In those instances you can find a way to make the vegetables more appealing to your pallet example: use variety of spices and get creative. Remember the more green leafy vegetables you eat the better!

Writers block.

I have been neglectful of my blog lately being so busy chasing and working on so many different projects which includes my book. Either way, I am still doing what I do best...being creative as well as innovative with my food and home economics. As everyday opens and welcomes new ideas to be birthed I recognize that my hands are truly blessed. I have decided to spread my wings and fly to different places to cultivate my culinary skills and expose myself to new as well as different languages and cultures. After all, we only have one life to live. I plan to use the time that I will be travelling to finish writing my book that will be filled with my personal experiences, recipes, struggles, opinions in the United States where I spent a large portion of my life. I will be starting another Kitchen in beautiful Kenya. I recognize that I have taken my country for granted and I will be dedicating this up coming next chapter of my life to Kenya. Thank you! for my strong background, education, people and roots.

It is amazing to me how much good food and amazing cooks are out there just waiting to be experienced and it is very true that great ingredients will always translate to great recipies and great stories. Nobody can teach you to be great at anything that is self taught.

Don't be reckless, learn to listen to your body and answer it wisely.  After all It is your responsibility. Food + Exercise= Balance. Life is good!

TamuTamu Means...Delicious

So, everyday I meet people who are curious, different and have some questions regarding my kitchen, myself and black culture. Well, I cannot speak for everyone but I can express myself. After all it is the first amendment which guarantees freedoms concerning religion, expression, assembly, and the right to petition. 
Food is my art I take great pride in it. TamuTamu means delicious in Kiswahili my national language from the beautiful country Kenya in the beautiful continent Africa.
Living in America has been a great experience especially in Humboldt County the one place that I have experienced racism in current USA. I look at this chapter in my life as an eye opener. The things that have come out of certain people's mouths continue to educate as well as entertain me and is constantly making me a stronger individual everyday so I have to express a great Thank you! for that. 
This entry is a reminder that a mind is a terrible thing to waste and intelligence will always dispel ignorance.
There is something called etiquette. Most people fail to exercise this. Here are a list of questions and statements that people have made and continue to make as well as think about me based on my beautiful exotic "black" complexion. As the weeks go by I will continue to add on to the list. Stay tuned...

1. Do you make any money doing what you do?

CHOICES.

We are living in a world filled with choices. What to do, where to eat, what to wear, which team we support, which color suits us best, which avocado is the ripest...And each morning when we open our eyes, we are blessed as we rise to yet another day filled with choices awaiting. A fresh day is always a good thing. Give thanks!

Choices surround us be it at work, school, coffee, outfits, music, dinning, color... generally with everything and in anything YOU have a choice.
So then, how are you living? Do you consider yourself healthy? Are you happy or simply content with your life?

Our diet and lifestyle affects how we live our daily lives and it all reflects on your body as well as your skin. It is important to get into a routine of exercising daily for at least 30-45minutes. But that does not mean you can indulge in poor eating habits. Exercising gets the blood flowing and the muscles active, remember the most important exercise is to breathe. Exercising does not have to be vigorous or looked at as a chore, unless you are a professional rugby player! Your body will thank you in the long run for taking care of it. People tend to think that exercising is only for certain people or a certain pedigree of person. Exercising is compulsory to humanity and mankind, it also promotes a healthy heart as well as brain.

Food + Exercise = Balance. This is common sense as well as food for thought.

Being practical in how you live your life is key. Stop blaming the food, start taking control of your life and diet you are in charge of your body, it is your temple, honor it, respect it, nurture it and most importantly listen and answer it wisely. Walking for instance is a great exercise and clearly well needed to travel from point A to point B. How about walking to the grocery store instead of driving? Walking is a refreshing alternative to complicated aerobic routines and overpriced gym memberships.This activity will melt away the pounds, tone your flabby bits and leave you on an emotional high. Because walking is a weight-bearing exercise, it can also help prevent the bone disease osteoporosis...Life is good!

 There are also tote bags that are comfortable and strong enough that are great to carry your groceries in, some are even fashionable! Investing in tote bags is a smart and eco-friendly choice. Include children in a brisk walk to the grocery store, introducing exercise at an early age encourages children to be more active. Walking is actually fun and can lead to an adventure such as a berry picking escapade and a delicious organic reward of a  blackberry pie, smoothie or jam with your find afterwards.
Human beings have become so conflicted and have earned more trust in computers and machinery as opposed to humanity, humans are under the impression that the planet needs saving when in reality it is mankind that needs to be saved.
Love is the key ingredient to any successful recipe including life. When you include love in anything you do it will be more beautiful.  Love is ultimately a choice and so is happiness these two go hand in hand and balance out one another include love into your life it is a choice that is completely rewarding, it feels good, it is uplifting and it is attainable. Did you know also know that kissing releases endorphins? Endorphins make you happy!

ECO- FRIENDLY, FUN AND HEALTHY CHOICES...
  • When cooking, instead of adding salt to the boiling water try to flavor the water with chopped parsley instead. The phytonutrients released into the boiling water also get absorbed into your food. Definitely a better choice over salt! Parsley provides nature’s best carotenoids and is a nutrition powerhouse. 
  • Making Healthy snacking choices is vital for your well being. Did you know that hummus is very rich in protein and it can help fight hunger cravings and balance blood sugar levels? This could in turn help curb excessive snacking.
  • Cotton remnants make great homemade wash cloths, baby wipes, dish cloths, napkins...Don't be wasteful. Everything means something.  
  • Fact not fiction about Parsley and coriander herb/spice which is a healthy, natural and holistic alternative to mouth wash. Parsley and Coriander are rich in the green pigment known as chlorophyll which because of it's alkaline properties cleanses the body in a generic sense. Chlorophyll attacks the bacteria of the mouth thus rendering them ineffective it also possesses detoxifying abilities.
  • Make your own greens at home. It is cost effective and better for you. Invest in some glass bottles, jars and conatiners instead of plastic which is dangerous. Always re-cycle and exercise green and eco friendly ways to live your life. Do your part and be a caring citizen of this planet. Think clean and green.

10 ways to grow and maintain a healthy attitude.

(i) Eat Fresh, healthy and Organic Food.
(ii) Associate with positive people and it becomes a way of living.
(iii) Make a gratitude list. Practice being aware of  all you have.
(iv) Do something kind for another human or the planet and don't expect anything back for your action, or brag nor boast about it.
(v) Look for what's right instead of what's wrong.
(vi) Turn off bad news- radio, television, internet and newspaper.
(vii) Celebrate the ordinary things. Start with the fact that the sun rose today.
(viii) For every no, say five yeses. Except when saying no means saying yes to yourself!
(ix) Notice something beautiful every day.
(x) Remember to laugh!

Blueberries, blackberries, raspberries, tomatoes, corn and most vegetables are being picked in most places. The strawberries are finishing or are probably done, peaches are in and early apples will start in late July. Have fun, eat healthier, organic and better tasting produce. Remember, you save money by picking your own locally grown fruit and vegetables as well as support your local farmers by buying and supporting their produce. Learn your body and food. Practice mindful eating as it can help save our planet. Relax and dwell peacefully in the moment. Choose to respond with compassion and always learn to keep peace within yourself at all times.

KITCHEN PHARMACY.

Recently my friend and I were exchanging recipes about food and life. It was refreshing as I consider him to be an excellent cook as well as person. We share a common love and respect for food, people, life and culture. Collectively we decided to call this blog entry Kitchen Pharmacy because we both agree that food is our medicine and it does sustain us. Many people blame food for their health issues when really, the root of the problem begins with an individual and most times is self inflicted by poor choices and lack of exercise. Every plant and animal on this planet was created with intent. How we live and how we treat our selves both inside and out will reflect and will determine your health and lifestyle, so it is important to listen to your body, honor it and treat it well. You have to live with what you did all your life, that is why you ought to be careful about what you do. The older we get the more we need to pay closer attention to our diet and exercise. Like my Father says,"Accept your age and chose to age gracefully." That is very true, there is nothing more sad and depressing than a person who denies his or her age. Old is gold!
All food just as life has a value. It is important to educate ourselves on our food and the benefits to our bodies. Having daily rituals and routines that accommodate our lifestyles also helps. Laughing and surrounding yourself with positive and happy people also adds zest into your life. Strong friendships are formed through food. I believe this and I live it. Do not let anybody or anything come between you, your happiness, your love for food, life and people. Do not compromise your happiness for anyone or anything. 
As my friend and I continued on our long hike we joke, talked, laughed and enjoyed the beautiful views. We later sat down under  a tree and enjoyed some fresh fruit that we had packed and continued exchanging recipes and ideas about food and nutrition. There was like always surplus information and so we came to the conclusion that the Kitchen is our Pharmacy with endless prescriptions. At the bottom we compiled a few creations and some of the beneficial values.

This is excellent, easy and can be enjoyed raw or cooked. The choice is solely yours! Fresh tuna is actually a rich source of lean protein, omega-3 fatty acids and a wide variety of vitamins and minerals. A diet with a high intake of these nutrients can benefit your health by enhancing the function of your organs and by possibly lowering your risk of chronic medical conditions. Young children and women who are pregnant or nursing can eat up to 6 ounces of fresh albacore tuna weekly but should refrain from consuming raw tuna, sashimi or sushi. Replacing red meat in your diet with fresh fish like tuna is a smart choice and may help decrease your chances of colon cancer and diabetes.


FACT: Beets are a super food that contain a super anti-oxidant that fights cancer and reduces inflammation. Besides that Beets are also good for...Improving blood flow, which increases endurance during a workout. Purifying the blood and also cleansing the liver. Beets have been proven to lower blood pressure and reverse hypertension, they could also help to deliver oxygen to the parts of your body that need it, even the brain. Beets carry an aphrodisiac effect as they contain high amounts of boron, related to the production of sex hormones, they are also high in fiber,vitamin C, folic acid and contain sodium, magnesium, calcium, iron and phosphorous. Folic acid aids in physical healing and is truly really excellent for pregnant women. Beets are great for mental health, as they contain betain which aids in depression, they are the sweetest vegetable, high in good carbohydrates as well as low in calories and will most certainly give you the right kind of energy. My neighbor has the green thumb for tomatoes and I am blessed because I get to enjoy them. He also appreciates and knows how much I love them. Once a week he graces me with his presence, a warm smile and a beautiful gift of Homegrown Organic Tomatoes in a basket. This always makes me so happy! and I am always looking forward to my next visit. I honestly cannot get enough of them.
Tomatoes are rich in vitamin C. The body cannot produce or store vitamin C. The recommended dietary allowance of vitamin C is 90 milligrams for men and 75 milligrams for women. Consuming fruits high in vitamin C benefits the skin by boosting collagen production. Lycopene is a powerful anti-oxidant that is linked to reducing the risk of heart disease. The antioxidant properties of lycopene may help protect your immune cells from destructive free radicals, molecules that can harm cells and damage DNA. Lycopene can also help defend the skin from UV rays of the sun as well as also help prevent prostate cancer and some other forms of cancer, heart disease, and other serious diseases.

PREVENTION IS BETTER THAN CURE.

I personally enjoy cooking with spices in fact I consider cooking without spices boring and insipid. When I taste food I can pick up many things including the freshness of the food and the spice that has been used to compliment that sundry plate. I believe that the right spices will always compliment the meal and your lifestyle.
Studies show that cultures that eat the most spicy food have much lower incidence of heart attack and stroke. Potential reasons being that chili peppers can reduce the damaging effects of LDL (bad cholesterol) and capsaicin may fight inflammation, which has been flagged as a risk factor for heart issues. Research also shows that hot chili peppers actually protect the stomach lining and may prevent the gastric damage associated with anti-inflammatory painkillers.
A laboratory study in the United Kingdom recently also found that capsaicin, which is responsible for the burning sensation chilies provide, can kill lung and pancreatic cancer cells without harming the surrounding cells. The benefits of adding chilies to your daily meals may protect against the buildup of cholesterol in the blood. According to the American Association for Cancer Research, capsaicin has the ability to kill some cancer and leukemic cells. One particular spice, turmeric, found in curry powder and some mustards, may also slow the spread of cancer and growth of tumors. Epidemiological studies have also linked the frequent use of turmeric to lower rates of breast, prostate, lung and colon cancer. Because it is an anti-inflammatory agent, tumeric can be used to treat a wide variety of conditions such as flatulence, jaundice, menstrual difficulties, bloody urine, hemorrhage, toothache, bruises, chest pain and colic. Vitamins A and C strengthen the heart muscle walls and the heat of the pepper increases blood flow throughout the body. All of this equals a stronger cardiovascular system. Spicy foods will boost a production of feel-good hormones, such as serotonin. So they may help aid in easing depression as well as stress. Spices will help detox your body and clearly spice up your life.

Our bodies are naturally designed to filter through toxins and self-heal, but we have seriously compromised that ability by polluting the air we breathe, eating non-organic pesticide-laden foods and bathing as well as drinking tainted and unfiltered water.
Everyday my goal and purpose is to encourage more people to listen to their body and to strive for ultimate health and well being. I encourage detox as it is essential to your body and actually almost mandatory. Don't forget also, that there’s our exposure to toxins through OTC drugs and vaccines. Clearly our bodies cannot keep up and need a helping hand with detoxification.
A parsley and cilantro detox can help protect against the accumulation of heavy metals in the bloodstream and organs. Heavy metals have been linked to cancer, heart disease, emotional instability, cognitive decline, kidney and lung disease as well as degenerative bone conditions.

Most herbs posses a healing quality in fact most if not all our fruits, vegetables, spices own healing properties and will help sustain us if we consume them how we should, educate ourselves on our food and actually listen to our bodies and start treating it right.

Take for example rosemary. This herb has been hailed since ancient times for its medicinal properties. Rosemary was traditionally used to help alleviate muscle pain, improve memory, boost the immune and circulatory system as well as promote hair growth. It is also a good source of iron, calcium and vitamin B6. In Europe rosemary is often used to help treat indigestion.
Rosemary also contains an ingredient called carnosic acid, that is able to fight off free radical damage in the brain and also can significantly promote eye health.

Cabbage also is is a powerful vegetable highly nutritious and also very common and affordable. It is also rich with vitamin K and anthocyanins that help with mental function and concentration. A recent Study on women showed a reduction in breast cancer when cruciferous vegetables such as cabbage were introduced or added to their diet. 

FOOD FACT:  (i) A warm compress made with cabbage leaves can help relieve the pain of a headache (ii) Hangovers from heavy drinking were reduced by using cabbage since Roman times.

Food is our medicine. Remember less is always more. Find and choose healthier solutions and choices and introduce more spices and herbs into your life as well as plenty of healthy and organic produce.Colorful fruits and vegetables contain potent phytochemicals that help our bodies fight heart disease, aging and cancer. FOOD RELIGION.

Everything that God put on this planet he put so we could enjoy. It says so even in the Bible...
Genisis 1:11 - And God said, Let the earth bring forth grass, the herb yielding seed, and the fruit tree yielding fruit after his kind, whose seed is in itself, upon the earth: and it was so...

As time goes by we are creating more rules to govern our food. I believe that we the citizens of this planet have done immense damage by putting a lot of toxins in basically almost everything that we ingest orally and or even physically for our bodies. Let's look at something as simple as water, or our once beautiful free clean air, then the food. I believe that food should always be fresh. And there is a lack of understanding when it comes to that word fresh. When we package our foods and add preservatives or simply replace a sensible meal with unnecessary calories, we are already making a poor choice. Let us learn to listen to our bodies and in turn answer it wisely.

 Let's look at how you start your day for instance. I have observed that many people make the wrong choices for breakfast which is the most important meal of the day. You should make an effort to make the time for this meal. A lot of people love that carton of cereal and too much coffee as well as sweet  pastries in the morning? It doesn't matter how organic it is the fact of the matter is that most store bought cereals are preserved so obviously not fresh. Packaged Foods always have a  "Shelf Life" which means the length of time that a commodity may be stored without becoming unfit for use or consumption. That energy will conduct you through out the day. Avoid too much sugar in the morning. Parents also who encourage children to eat store bought cereal in the morning, perhaps because it is faster and convenient, make a poor choice as most of these cereals have a  high sugar content which will trigger off hyper active behavior and affect the child's focus and attention span.
There are actually better and healthier breakfast options such as Oatmeal, fresh squeezed orange juice, fruit, bread, eggs...Listen to your body it is talking to you.
I have to feel privileged because as a child my Mama was very particular in fact strict about how and what we ate. Everything we ate was always 100%fresh and we had to learn to make it as we grew older. This habit or pattern also encourages stronger bond ties within family members as well as friends. Food brings people together.
When I moved to the United States I could not believe the food culture and the grocery stores. The endless aisles of deception. The high sugar content in food, the preservatives...it made me cringe as well as realize and appreciate the teachings of Mama. Eating out always results in poorer eating choices. Restaurant foods tend to be saltier, fattier and high in calories as opposed to food prepared at home. I pride myself in preparing all my meals at home, I am careful with energy and my food, I do not indulge in random food.

Making healthy adjustments towards your life is a great thing. Listening to your body is even greater because it is only you who knows and truly understands your body and you live in it. Food is our medicine it sustains us. My goal everyday is to encourage more people to strive for ultimate health and well being because it is attainable and we are all worth it. By taking the time to learn our food and our bodies we are growing, healing and allowing ourselves to live more bountiful healthier lives, and that is mandatory.
Cleansing your body by drinking and or eating pure as well as exercising is a remedy that most of us can benefit from. Many herbs, fruits and vegetables can also help us cleanse our systems of excess salts and metals that we are ingesting into our bodies everyday.

 PARSLEY:  This herb is rich in anti-oxidants, vitamins, minerals and dietary fiber, which help control blood-cholesterol, prevents constipation, protects the human body from free radicals mediated injury and from cancer. The essential oil, Eugenol present in this herb has been in therapeutic use in dentistry as a local anesthetic and anti-septic agent for teeth and gum diseases. It is perhaps the richest of the entire herb source for vitamin K.
CILANTRO: The herb is a good source of minerals like potassium, calcium, manganese, iron, and magnesium. Potassium is an important component of cell and body fluids that helps control heart rate and blood pressure.
CANTALOUPE: Intake of cantaloupe has recently been found to lower risk of metabolic syndrome. It also contains more beta-carotene than alpha-carotene. Researchers have shown that intake of cantaloupe phytonutrients can improve insulin and blood sugar metabolism. In a study that included more than 50,000 women whose ages ranged from 45 to 67, it was found that those who consumed high amounts of vitamin A on a daily basis reduced their risk of developing cataracts by as much as 40%. Aside from being a significant source of vitamin A, cantaloupe is also a great source of vitamin C, which strengthens your immune system by stimulating the white blood cells which are responsible for killing viruses, bacteria and other foreign elements that seek to enter your body.

Children always need encouragement when it comes to eating healthier. So, playing with the food and making it look appealing always helps. Making healthy drinks at home also is a good choice as you can regulate the sugar content and get creative.
Say No! to GMO and demand the right to know what is in your food. Frequenting your local farmers market is a great way to have healthy options of fresh, organic produce and indulge in food culture as well as supporting local farmers.
We have to take our relationship with food seriously. Give thanks! to the planet and your health. Food is Religion and medicine for our body, mind and soul. Remember that you are what you eat!
